  • 3 cups shredded boneless, skinless chicken breasts (about 34 breasts)
  • 8 flour tortillas
  • 1 cup salsa (mild or spicy)
  • 2 cups shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 tbsp olive oil
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a large baking dish.
  2. In a skillet over medium heat, add olive oil. Sauté diced onion and minced garlic until soft, about 5 minutes.
  3. Stir in shredded chicken, cumin, and chili powder; cook for another 3 minutes.
  4. Layer half of the tortillas in the baking dish, followed by half of the chicken mixture, salsa, and cheese.
  5. Repeat layers with remaining ingredients, finishing with cheese on top.
  6. Bake for 25–30 minutes until the cheese is bubbly and golden brown.
