  • 2 lbs boneless, skinless chicken thighs
  • 4 garlic cloves, minced
  • 1 cup plain Greek yogurt
  • 2 tbsp freshly squeezed lemon juice
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • Pita bread or lavash for wrapping
  • Fresh toppings (tomatoes, cucumbers, onions) as desired

Instructions

  1. In a bowl, mix yogurt, garlic, lemon juice, cumin, coriander, paprika, cayenne pepper, salt, and pepper. Add chicken thighs and coat well. Marinate for at least 1 hour or preferably overnight.
  2. Heat the grill to medium-high or set the oven to broil. Line a baking sheet with foil if using the oven.
  3. Cook marinated chicken for about 6-8 minutes per side until golden brown and cooked through (internal temperature should reach 165°F/75°C). Allow resting before slicing.
  4. Optionally sauté sliced onions and bell peppers in olive oil until caramelized.
  5. Warm pita bread; layer with sliced chicken, sautéed veggies, and fresh toppings. Drizzle with tahini or garlic sauce if desired.
