  • 2 lbs boneless, skinless chicken thighs
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 1 can (14 oz) whole tomatoes
  • 2 oz unsweetened chocolate, chopped
  • 2 tbsp chili powder
  • 1 cinnamon stick
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onions until translucent (about 5 minutes).
  2. Add minced garlic and chicken thighs; cook until browned (5–7 minutes).
  3. Stir in canned tomatoes and chopped chocolate until melted.
  4. Add chili powder, cinnamon stick, and chicken broth. Simmer for 20–25 minutes.
  5. Remove the cinnamon stick and blend the mixture until smooth.
  6. Return blended sauce to the pot and simmer with seasoned chicken for another 15–20 minutes.
