  • 4 boneless, skinless chicken breasts
  • 8 oz fresh cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup dry Marsala wine
  • 1 cup low-sodium chicken broth
  • ½ cup heavy cream (or half-and-half)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Pat dry the chicken breasts and season both sides with salt and pepper.
  2. In a large skillet over medium heat, melt butter with olive oil. Sear the chicken until golden brown, about 5 minutes per side. Remove and set aside.
  3. In the same skillet, sauté minced garlic and sliced mushrooms until tender, about 5-7 minutes.
  4. Deglaze the pan with Marsala wine, scraping up any bits stuck to the bottom. Simmer for 2-3 minutes.
  5. Stir in chicken broth and heavy cream; let simmer until slightly thickened, about 3-5 minutes.
  6. Return the chicken to the skillet, spoon sauce over it, and simmer for another 5 minutes.
  7. Serve hot over pasta or rice, garnished with chopped parsley.
