  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 8 flour tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 1 can (15 oz) black beans (rinsed)
  • 1 cup bell peppers (chopped)
  • 1 medium onion (finely chopped)
  • ¼ cup fresh cilantro (chopped)

Instructions

  1. Preheat oven to 350°F.
  2. Season chicken breasts with salt and pepper, bake on a sheet for 25-30 minutes until cooked through.
  3. Sauté onion and bell peppers in a skillet with oil over medium heat for 5-7 minutes.
  4. Shred cooked chicken using two forks.
  5. In a bowl, mix shredded chicken with black beans, sautéed vegetables, half of the enchilada sauce, and half of the cheese.
  6. In a greased baking dish, layer tortillas, half the chicken mixture, more sauce, and repeat until all ingredients are used.
  7. Top with remaining cheese and bake uncovered for 25-30 minutes until bubbly and golden brown.
