  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cups chopped romaine lettuce
  • ½ cup Caesar dressing
  • 4 large flour tortillas
  • ½ cup freshly grated Parmesan cheese
  • ¼ tsp black pepper

Instructions

  1. Grill or pan-sear chicken breasts until they reach an internal temperature of 165°F (75°C). Let rest for juiciness.
  2. While the chicken rests, wash and chop the romaine lettuce into bite-sized pieces.
  3. In a bowl, combine chopped chicken with romaine and drizzle with Caesar dressing. Toss gently to coat.
  4. Lay a tortilla flat on your work surface and spoon the chicken mixture onto one side.
  5. Fold in each side of the tortilla and roll tightly from bottom to top. Secure with toothpicks if needed.
  6. Cut in half diagonally and enjoy immediately.
