  • 45 cloves fresh garlic, minced
  • 1 cup bell peppers (mixed red and green), sliced
  • 28 oz canned diced tomatoes (high-quality)
  • 2 tbsp extra virgin olive oil
  • 2 tsp dried oregano
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup dry red wine (optional)
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping the vegetables and mincing the garlic for easy access.
  2. Heat olive oil in a large pot over medium heat. Season chicken thighs with salt and pepper, then sear until browned on both sides (about 5 minutes each). Remove and set aside.
  3. In the same pot, sauté garlic and bell peppers until softened (approximately 4-5 minutes).
  4. Add diced tomatoes and oregano; stir well. If using red wine, add it now and let simmer for 3-4 minutes.
  5. Return chicken to the pot, cover, and let simmer on low heat for about 30-35 minutes.
  6. Just before serving, stir in fresh basil leaves for added brightness.
