  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 medium yellow onion, chopped
  • 4 large flour tortillas
  • 1 cup shredded cheddar or Monterey Jack cheese
  • ½ cup sour cream
  • ½ cup salsa
  • 1 ripe avocado or ½ cup guacamole
  • 2 tsp ground cumin
  • 2 tsp paprika
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Dice the chicken into bite-sized pieces and season with salt, pepper, cumin, paprika, and chili powder.
  2. Heat olive oil in a skillet over medium heat. Sauté onions until translucent; add bell peppers until tender.
  3. Add seasoned chicken to the skillet and cook for about 7–10 minutes until golden brown.
  4. Mix in salsa and cheese until melted.
  5. Lay a tortilla flat and fill it with the chicken mixture; top with sour cream and avocado or guacamole as desired.
  6. Roll up the burrito tightly; optional: cook seam-side down in the skillet for crispy edges.
