  • 2 cups basmati rice
  • 2 medium onions, thinly sliced
  • 2 tablespoons fresh ginger-garlic paste
  • 1 cup plain yogurt
  • 1 tablespoon garam masala
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped mint leaves
  • 3 tablespoons vegetable oil or ghee
  • 1 teaspoon chili powder (adjust to taste)
  • Salt to taste

Instructions

  1. In a bowl, combine yogurt, ginger-garlic paste, garam masala, salt, and chili powder. Add chicken pieces and marinate for at least 30 minutes.
  2. Heat oil or ghee in a large pot over medium heat. Sauté sliced onions until golden brown and crispy. Remove from pot and set aside.
  3. In the same pot, add marinated chicken and cook until browned on all sides (about 5-7 minutes).
  4. Layer partially cooked basmati rice over the chicken evenly and sprinkle with cilantro and mint leaves.
  5. Cover tightly and reduce heat to low; steam for about 20-25 minutes until flavors meld perfectly.
  6. Fluff the biryani gently with a fork before serving hot with raita or salad on the side.
