  • 4 boneless, skinless chicken breasts
  • 8 oz elbow macaroni
  • 2 cups sharp cheddar cheese, freshly grated
  • 2 cups whole milk
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 cup panko breadcrumbs (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper; place in a baking dish coated with cooking spray.
  2. Bake for 25–30 minutes until cooked through; let cool slightly before dicing into bite-sized pieces.
  3. Boil water in a large pot; add elbow macaroni and cook until al dente. Drain and set aside.
  4. In a saucepan over medium heat, melt butter; whisk in flour until golden brown. Gradually add milk while whisking continuously until thickened.
  5. Remove from heat and stir in shredded cheddar cheese until melted. Season with garlic powder, salt, and pepper.
  6. In a large bowl, combine diced chicken, pasta, and cheese sauce; stir well to coat.
  7. Optionally, sprinkle panko breadcrumbs on top and bake at 350°F (175°C) for an additional 20 minutes until bubbly.
