Ingredients

Scale
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup long-grain jasmine rice
  • 1 cup shredded sharp cheddar cheese
  • 1 cup whole milk (or plant-based alternative)
  • 2 tablespoons unsalted butter
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt to taste
  • Freshly ground black pepper to taste
  • ½ cup breadcrumbs (optional)

Instructions

  1. Prepare your ingredients: Rinse and chop the broccoli into bite-sized pieces.
  2. Cook the rice: In a saucepan, combine jasmine rice with 2 cups of water. Bring to a boil, then reduce heat and simmer for about 15 minutes until fluffy.
  3. Sauté broccoli: While the rice cooks, steam or lightly sauté the broccoli for about 4-5 minutes until bright green and tender-crisp.
  4. Create cheesy mixture: In a bowl, mix cooked rice, sautéed broccoli, cheddar cheese, milk, butter, onion powder, garlic powder, salt, and pepper until well combined.
  5. Bake: Preheat oven to 350°F (175°C). Transfer mixture to a greased baking dish. Top with remaining cheese and breadcrumbs if desired. Bake for 25-30 minutes until bubbly and golden.
  6. Serve: Let cool slightly before serving; garnish with fresh herbs if desired.
