  • 1 lb boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1 cup roasted cashews
  • 1 cup bell peppers (red and yellow), sliced
  • 2 green onions, chopped
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 2 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Chop chicken into bite-sized pieces and mince garlic.
  2. Marinate chicken in half the soy sauce mixed with cornstarch for at least 30 minutes.
  3. Heat sesame oil in a large skillet over medium-high heat. Add marinated chicken and cook until golden brown (5-7 minutes).
  4. Stir in garlic and bell peppers; sauté for an additional 3 minutes until peppers are tender-crisp.
  5. In a bowl, whisk remaining soy sauce, rice vinegar, and cornstarch mixture until smooth. Pour over the chicken and veggies; stir to combine.
  6. Add cashews and green onions, mixing well until heated through (about 2 minutes). Serve hot over rice or noodles.
