  • 1 cup (100g) grated Pecorino Romano cheese
  • 1 tbsp freshly cracked black pepper
  • Salt (for pasta water)
  • ½ cup (120ml) reserved pasta water

Instructions

  1. Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente according to package instructions. Reserve ½ cup of pasta water before draining.
  2. In a bowl, grate 1 cup of Pecorino Romano cheese.
  3. Return drained spaghetti to the pot over low heat. Add reserved pasta water, most of the grated cheese, and black pepper. Stir vigorously until combined into a creamy sauce.
  4. Serve immediately, garnished with extra cheese and pepper.
