  • 1 lb lean ground beef
  • 1 packet taco seasoning (about 1 oz)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes
  • 6 flour tortillas
  • 2 cups shredded cheddar cheese
  • ½ cup sour cream (for serving)
  • ¼ cup chopped green onions (for garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef for about 6-8 minutes, draining excess fat.
  3. Stir in taco seasoning and diced tomatoes with their juices; simmer for about 5 minutes.
  4. Mix in black beans and corn; warm through for an additional 3-4 minutes.
  5. In a greased baking dish, layer half of the beef mixture, followed by tortillas, more beef, and cheese. Repeat the layers until all ingredients are used.
  6. Cover with foil and bake for 20 minutes; remove foil and bake for another 10 minutes until cheese is bubbly and golden.
  7. Let cool slightly before topping with sour cream and green onions to serve.
