  • 4 medium bell peppers (red, yellow, or green)
  • 2 cups shredded rotisserie chicken
  • 1/2 cup buffalo sauce
  • 4 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, chopped
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds. Drizzle olive oil inside each pepper.
  3. In a bowl, mix the shredded chicken, buffalo sauce, and cream cheese until well combined.
  4. Stuff each pepper generously with the chicken mixture and top with shredded cheddar cheese.
  5. Place the stuffed peppers in a baking dish and cover loosely with foil. Bake for 30-35 minutes until peppers are tender and cheese is bubbly.
  6. Remove foil during the last 5 minutes to allow cheese to brown slightly. Sprinkle chopped green onions on top before serving.
