Ingredients

Scale
  • 4 cups fresh blackberries (about 1.5 lbs)
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons lemon juice
  • 2 cups all-purpose flour (for crust)
  • 1 teaspoon salt
  • 1 cup unsalted cold butter (2 sticks)
  • 6 tablespoons ice water

Instructions

  1. Prepare the Pie Crust: In a bowl, mix 2 cups of flour and 1 teaspoon of salt. Cut in the cold butter until crumbly. Gradually add ice water until combined; form into a disk and chill for at least 30 minutes.
  2. Make the Filling: In another bowl, combine the blackberries, sugar, flour, and lemon juice. Let it sit while you roll out the dough.
  3. Roll Out Dough: On a floured surface, roll out half of the chilled dough to fit your pie dish. Place it gently into the dish.
  4. Add Filling: Pour the blackberry mixture into the prepared crust.
  5. Top Crust: Roll out the second half of the dough and either cut slits for ventilation or create a lattice top.
  6. Bake: Preheat oven to 425°F (220°C). Bake on the middle rack for about 45-50 minutes until golden brown and bubbly.
  7. Cool & Serve: Allow to cool slightly before serving warm with vanilla ice cream or enjoy it on its own.
