  • 3 lbs beef chuck roast
  • 6 cloves fresh garlic
  • 1 cup fresh cilantro, chopped
  • 1/4 cup freshly squeezed lime juice
  • 2 chipotle peppers in adobo sauce, chopped (adjust to taste)
  • 1 cup low-sodium beef broth
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the chuck roast and cut into large chunks. Season generously with salt and pepper.
  2. In a skillet over medium heat, sauté chopped onions until translucent. Add minced garlic and chipotle peppers; cook for another minute until fragrant.
  3. Transfer the mixture to a slow cooker or Dutch oven. Add beef broth, lime juice, cumin, oregano, and beef chunks.
  4. Cook on low for 8 hours or high for about 4 hours until fork-tender (or bake in an oven at 300°F for 3–4 hours).
  5. Shred the beef with two forks and mix it back into its juices before serving.
