  • 4 fresh cod fillets (6 oz each)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 garlic cloves (minced)
  • 1/4 cup fresh parsley (chopped)
  • 1 cup panko breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish with cooking spray or olive oil.
  2. Pat dry the cod fillets and place them in the baking dish. Drizzle with olive oil and lemon juice.
  3. In a bowl, mix panko breadcrumbs, minced garlic, chopped parsley, salt, and pepper.
