  • 3 cups Granny Smith apples, peeled and chopped (about 3 medium apples)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a bowl, mix flour, sugar, baking powder, salt, cinnamon, and nutmeg until well blended.
  3. In another bowl, whisk eggs with vegetable oil and vanilla extract until smooth. Combine with dry ingredients to form a thick batter.
  4. Gently fold in the chopped apples.
  5. Pour batter into the prepared pan and bake for 35-40 minutes or until golden brown and a toothpick comes out clean.
