  • 2 lobster tails (about 1 lb total)
  • 4 tbsp unsalted butter
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 4 cups fish stock or low-sodium seafood broth
  • 1 cup heavy cream
  • ½ cup dry sherry or white wine
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 2 tbsp fresh lemon juice

Instructions

  1. Cook the Lobster Tails: Boil water in a large pot. Add lobster tails and cook for 8-10 minutes until bright red and fully cooked. Remove and chop the meat.
  2. Sauté Aromatics: In another pot, melt butter over medium heat. Add onions and garlic; cook until translucent (about 5 minutes).
  3. Add Tomato Paste: Stir in tomato paste and caramelize for another 2-3 minutes.
  4. Pour in Stock: Slowly add fish stock, scraping up browned bits from the bottom of the pot. Bring to a gentle simmer.
  5. Add Cream & Lobster: Mix in heavy cream and chopped lobster meat; let simmer on low for about 15 minutes.
  6. Final Touches: Stir in sherry or white wine, thyme, bay leaf, and lemon juice; simmer for an additional 5 minutes before serving hot.
