Ingredients

Scale
  • 1 lb boneless ribeye steak
  • 1 medium sweet onion (like Vidalia), diced
  • 1 medium green bell pepper, diced
  • 8 oz provolone cheese, shredded
  • 10 eggroll wrappers
  • 2 cups vegetable oil (for frying)

Instructions

  1. Thinly slice the ribeye steak against the grain. Dice the onion and green pepper.
  2. In a skillet over medium-high heat, add a splash of oil. Sauté onion and green pepper until soft (3-5 minutes). Add the sliced steak and cook until browned (about 4 minutes).
  3. Sprinkle provolone cheese over the mixture and stir until melted.
  4. Lay an eggroll wrapper flat, place 2 tablespoons of filling near one edge, fold tightly while tucking in sides.
  5. Heat oil in a deep pan to 350°F (175°C) and fry each eggroll until golden brown (3-5 minutes per roll). Drain on paper towels before serving.
