  • 2 cups fresh cranberries
  • 1 cup granulated sugar (divided)
  • 1/2 cup unsalted butter (softened)
  • 1 cup all-purpose flour
  • 2 large eggs (room temperature)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, cream together softened butter and 3/4 cup granulated sugar until light and fluffy. Gradually mix in flour and press into the bottom of the prepared dish.
  3. Toss cranberries with remaining 1/4 cup granulated sugar and set aside.
  4. In another bowl, whisk eggs until frothy; stir in vanilla extract. Combine with the flour mixture until just mixed.
  5. Pour half of the batter into the dish, layer cranberries on top, then drizzle remaining batter over cranberries.
  6. Bake for 30-35 minutes until edges are golden brown and center is set. Cool completely before slicing.
