  • 1 lb lean ground beef or turkey
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 cup bell peppers, diced (red/yellow/green)
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 cups low-sodium chicken or vegetable broth

Instructions

  1. Prepare your ingredients by finely chopping the onion, bell peppers, and garlic.
  2. In a skillet over medium heat, brown the ground meat until fully cooked (about 5-7 minutes). Drain excess grease.
  3. Transfer the browned meat to the crockpot. Add crushed tomatoes, black beans, kidney beans, diced bell peppers, garlic, onion, broth, chili powder, cumin, salt, and pepper. Stir well.
  4. Cover the crockpot; cook on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir again and adjust seasonings as needed.
  6. Ladle into bowls and serve hot with your favorite toppings.
