Taco stuffed shells are a delightful fusion of pasta and taco flavors, perfect for busy weeknights or festive gatherings. These jumbo pasta shells are generously filled with seasoned ground meat, zesty salsa, and melted cheese, all topped with fresh cilantro.   • 12 large pasta shells
  • 1 lb ground beef or turkey
  • 2 tbsp taco seasoning
  • 1 cup salsa (mild or spicy)
  • 1.5 cups shredded cheddar cheese
  • ¼ cup chopped fresh cilantro
  • ½ cup sour cream (for serving)
  • 1 tbsp olive oil
  • Nonstick cooking spray (for baking dish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly coat a baking dish with nonstick spray.
  2. Cook pasta shells in boiling salted water until al dente, about 8-10 minutes; drain and keep warm.
  3. In a skillet over medium heat, add olive oil and ground meat; cook until browned (5-7 minutes). Stir in taco seasoning and salsa.
  4. Stuff each shell with two tablespoons of the meat mixture, placing them in the baking dish.
  5. Sprinkle shredded cheese over the stuffed shells and cover with foil.
  6. Bake for 20 minutes; remove foil after 15 minutes to allow cheese to bubble.
  7. Let cool for five minutes before serving with cilantro and sour cream.
