  • 4 large bell peppers (any color)
  • 1 lb lean ground beef
  • 2 cups cooked rice
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Salt and pepper to taste
  • Optional: herbs and spices of choice

Instructions

  1. Preheat oven to 375°F (190°C). Cut off the tops of the bell peppers and remove seeds.
  2. In a skillet over medium heat, sauté chopped onion and minced garlic until translucent.
  3. Add ground beef to the skillet; cook until browned. Stir in cooked rice and half of the tomato sauce.
  4. Season with salt, pepper, and desired herbs/spices; mix well.
  5. Stuff each pepper with the beef mixture, top with remaining tomato sauce, and sprinkle cheese on top.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes until cheese is golden.
