  • 12 cups filtered water
  • 2 medium carrots, chopped
  • 1 medium onion, chopped
  • 2 celery stalks, chopped
  • 2 tsp apple cider vinegar
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • 1 tsp whole peppercorns

Instructions

  1. Preheat the oven to 400°F (200°C). Roast the bones for about 30 minutes until golden brown.
  2. In a large stockpot, combine the roasted bones with chopped carrots, onions, and celery.
  3. Pour in filtered water until everything is submerged and add apple cider vinegar.
  4. Bring to a rolling boil over medium heat, then reduce to a simmer.
  5. Simmer gently for 12-24 hours, skimming off foam as needed.
  6. Strain out solids using a fine mesh strainer or cheesecloth. Store broth in jars.
