  • ½ cup cornstarch
  • ½ cup water (for cornstarch slurry)
  • 2 tablespoons freshly squeezed lemon juice
  • 2 teaspoons rose water or orange blossom water
  • ½ cup chopped pistachios or walnuts (optional)

Instructions

  1. Prepare your workspace by lining an 8-inch square pan with parchment paper.
  2. In a saucepan, combine the granulated sugar and 1 cup of water over medium heat. Stir until dissolved to create a syrup.
  3. In a separate bowl, mix cornstarch with ½ cup of water to form a slurry. Gradually add this to the sugar syrup while stirring constantly to prevent lumps.
  4. Cook over low heat, stirring frequently until the mixture thickens and turns translucent (10-15 minutes).
  5. Remove from heat and stir in lemon juice and your chosen flavoring. Fold in nuts if desired.
  6. Pour the mixture into the prepared pan, smoothing the top. Allow it to cool at room temperature before dusting generously with powdered sugar.
