  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 cup bell peppers, diced (mix of red and yellow)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes (approx. 4 tbsp)
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp chili powder (optional)

Instructions

  1. Rinse and drain the canned black and kidney beans thoroughly.
  2. Dice the bell peppers and chop the cherry tomatoes in half. Finely chop the red onion.
  3. In a large mixing bowl, combine the rinsed beans, bell peppers, cherry tomatoes, red onion, and cilantro.
  4. In a separate small bowl, whisk together lime juice and olive oil until well combined.
  5. Pour the dressing over the salad mixture and toss gently until everything is evenly coated.
  6. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
