  • 4 medium sweet potatoes (about 2 lbs)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh or thawed frozen)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • ½ cup sour cream or Greek yogurt
  • 1 tsp cumin
  • 1 tsp chili powder
  • ¼ cup chopped fresh cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and prick each sweet potato with a fork. Place them on a parchment-lined baking sheet.
  3. Bake for 45-60 minutes until tender; they should pierce easily with a fork.
  4. In a bowl, mix black beans, corn, cumin, chili powder, and half of the cheese.
  5. Once cool enough to handle, slice each sweet potato open lengthwise and fluff the insides.
  6. Generously stuff each potato with the filling and top with remaining cheese.
  7. Return to the oven for an additional 10 minutes until cheese is melted.
  8. Garnish with sour cream or Greek yogurt and fresh cilantro before serving.
