  • 4 oz fresh salmon fillets
  • 1 cup jasmine rice
  • 2 tbsp olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 2 garlic cloves, minced
  • Fresh herbs (dill or parsley) for garnish

Instructions

  1. Rinse jasmine rice under cold water until clear. Cook in 2 cups of water over medium heat until simmering.
  2. Pat salmon fillets dry and season with salt, pepper, and olive oil.
  3. In a pan, heat 1 tbsp olive oil over medium heat and sauté minced garlic until golden brown (about 30 seconds).
  4. Add seasoned salmon fillets skin-side down and cook for 5-6 minutes on each side until flaky.
  5. Squeeze fresh lemon juice over cooked salmon.
  6. Fluff rice with a fork after cooking for 15-20 minutes, then serve alongside salmon.
