  • 8 oz wide rice noodles
  • 1 lb chicken thighs, cut into bite-sized pieces
  • 2 cups bok choy, sliced
  • 1 cup carrots, thinly sliced
  • 3 cloves fresh garlic, minced
  • 4 tbsp low-sodium soy sauce
  • 2 tsp sugar
  • 2 tbsp vegetable oil

Instructions

  1. Soak the wide rice noodles in warm water for about 30 minutes until softened. Drain and set aside.
  2. Heat vegetable oil in a large wok over medium-high heat. Add chicken pieces and cook until browned and fully cooked.
