  • 8 oz spaghetti
  • 1 lb lean ground beef
  • 1 cup chopped bell peppers (red and green)
  • 1 medium sweet onion, chopped
  • 3 cloves garlic, minced
  • 14 oz canned diced tomatoes
  • 2 jalapeños, sliced (adjust for heat)
  • 1 cup shredded cheddar cheese
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Boil salted water in a large pot. Cook spaghetti until al dente according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Sauté onions and bell peppers until tender, about 5 minutes.
  3. Push veggies aside and add ground beef. Cook until browned, breaking it apart as it cooks. Drain excess fat if needed.
  4. Stir in garlic, diced tomatoes, jalapeños, cumin, paprika, salt, and pepper. Simmer for about 10 minutes.
  5. Toss cooked spaghetti into the skillet with the meat mixture. Sprinkle cheese on top and mix well.
  6. Remove from heat and garnish with fresh cilantro before serving hot.
