  • 2 cups cottage cheese (full-fat or low-fat)
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 4 cups marinara sauce (store-bought or homemade)
  • 1 lb ground beef or Italian sausage
  • 2 cups fresh spinach or kale (optional)
  • 2 tsp Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Cook the lasagna noodles according to package instructions until al dente, then drain and set aside.
  3. In a skillet, brown the ground beef or sausage over medium heat, then drain excess fat. Stir in the marinara sauce and Italian seasoning; simmer for 5 minutes.
  4. In a bowl, combine cottage cheese, half of the Parmesan cheese, and some Italian seasoning until creamy.
  5. Layer the bottom of your baking dish with meat sauce, followed by noodles, cottage cheese mixture, spinach (if using), mozzarella, and more meat sauce. Repeat layers until all ingredients are used.
  6. Cover with foil and bake for 25 minutes. Remove foil and top with remaining mozzarella and Parmesan; bake uncovered for another 15 minutes until golden brown.
  7. Allow cooling for 10-15 minutes before slicing.
