  • 4 boneless, skinless chicken breasts (diced)
  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 medium onion (finely chopped)
  • 1 tsp garlic powder
  • 1 cup shredded cheddar cheese
  • 2 cups frozen mixed vegetables
  • 2 tbsp olive oil or butter
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a skillet over medium heat, add olive oil or butter. Sauté chopped onions until translucent (about 5 minutes).
  3. Add diced chicken to the skillet; cook until no longer pink.
  4. In a mixing bowl, combine cooked chicken, rice, chicken broth, cream of mushroom soup, garlic powder, mixed vegetables, salt, and pepper.
  5. Transfer the mixture into the greased baking dish and spread evenly.
  6. Cover with aluminum foil and bake for 30 minutes. Remove foil, sprinkle cheese on top, then bake uncovered for an additional 15 minutes until golden brown.
