  • 4 cups vegetable oil (for frying)

  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp fresh parsley (optional)

Instructions

  1. Wash and peel Russet potatoes. Cut them into thick wedges (about ½ inch).
  2. Soak potato wedges in cold water for at least 30 minutes to remove excess starch.
  3. Drain and pat dry the potato wedges with paper towels.
  4. In a bowl, toss the wedges with salt, black pepper, garlic powder, and vegetable oil until evenly coated.
  5. Heat vegetable oil in a large pot to 350°F (175°C). Carefully fry potato wedges in batches for about 5-7 minutes until golden brown.
  6. Remove fries using a slotted spoon and drain on paper towels. Sprinkle with additional salt while hot.
