  • 8 corn or flour tortillas
  • 1 cup shredded cheddar or Monterey Jack cheese

  • 2 tsp chili powder
  • 2 tbsp olive oil
  • Sour cream and salsa for serving

Instructions

  1. Season chicken breasts with salt, pepper, cumin, and chili powder. Heat olive oil in a skillet over medium heat; cook chicken until golden brown and internal temperature reaches 165°F (75°C), about 6-7 minutes per side.
  2. Shred the cooked chicken with two forks and mix in additional spices if desired.
  3. Warm tortillas slightly to make them pliable.
  4. Place shredded chicken and cheese on each tortilla; roll tightly.
  5. Preheat oven to 425°F (220°C). Arrange taquitos seam-side down on a parchment-lined baking sheet. Brush with olive oil and bake for 15-20 minutes until crispy.
