  • 4 cups low-sodium vegetable broth

  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried thyme
  • ½ tsp smoked paprika
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until soft and fragrant, about 5 minutes.
  2. Add diced potatoes and corn to the pot. Stir to coat in the aromatic mixture.
