  • 5 oz Boursin cheese (herbed variety)

  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Boil the pasta in salted water until al dente; reserve 1/2 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 1 minute.
  3. Add fresh spinach to the skillet; cook until wilted.
  4. Lower heat and incorporate Boursin cheese and reserved pasta water, stirring until smooth.
