Ingredients

  • 1 cup dried green or yellow split peas
  • 2 medium carrots, diced
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 4 cloves garlic, minced
  • 6 cups low-sodium vegetable or chicken broth
  • 2 bay leaves
  • Salt and pepper to taste
  • Optional: 1 ham bone or 4 strips cooked bacon

Instructions

  1. Heat a large pot over medium heat. Add olive oil and sauté diced onions, carrots, and celery until soft (about 5 minutes).
  2. Stir in minced garlic and sauté for another minute.
  3. Add rinsed split peas and broth until they are covered by about two inches of liquid.
  4. Season with bay leaves, salt, and pepper; stir well.
  5. Bring to a boil then reduce heat to low and simmer gently for 60-90 minutes until peas are tender.
  6. Remove bay leaves before serving; blend part of the soup if desired for creaminess.
