  • 4 medium Yukon Gold potatoes, peeled and cubed
  • 4 medium carrots, sliced into rounds
  • 2 medium sweet onions, diced
  • 4 cups low-sodium beef broth
  • 2 tsp fresh thyme leaves
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions
