  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 4 cups low-sodium vegetable broth
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon (about 2 tbsp)

Instructions

  1. Prepare ingredients by chopping the onion, carrots, and celery. Rinse the chickpeas under cold water.
  2. In a large pot, heat olive oil over medium heat. Sauté onions, garlic, carrots, and celery until softened (about 5 minutes).
  3. Add chickpeas along with cumin and coriander; sauté for another minute until fragrant.
  4. Pour in vegetable broth and bring to a gentle boil.
  5. Lower the heat and let simmer uncovered for about 20 minutes to meld flavors.
  6. Stir in fresh lemon juice just before serving.
