  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the soaked pinto beans under cold water.
  2. In a large pot, heat olive oil over medium heat. Add diced onions and sauté for about 5 minutes until translucent.
  3. Stir in minced garlic, cumin, and chili powder; cook for 1 minute until fragrant.
  4. Add the drained pinto beans and pour in vegetable broth until it covers the beans by an inch.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 1-1.5 hours until beans are tender.
  6. Season with salt and pepper to taste before serving.
