  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 2 cups fresh spinach or kale
  • 16 oz pasta gnocchi
  • 6 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping carrots, celery, and garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté the chopped veggies until softened (about 5 minutes).
  3. Add the chicken breasts and pour in chicken broth to cover. Simmer until chicken is cooked through (about 15 minutes). Remove and shred the chicken.
  4. Stir in gnocchi and cook until they float (about 2-3 minutes).
  5. Lower the heat and mix in heavy cream gradually. Return shredded chicken to pot along with thyme. Season with salt and pepper.
  6. Stir in spinach or kale just before serving.
