  • 1 cup bell peppers, chopped (any color)

  • 2 tsp paprika
  • 1 tsp cumin
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by chopping the onions and bell peppers into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat. Sauté the onions until translucent, about 5 minutes.
  3. Season chicken breasts with salt, pepper, paprika, and cumin. Add to the skillet and sear for about 5-7 minutes per side until golden brown.
  4. Remove chicken temporarily, then add rice and chicken broth to the skillet; stir well.
  5. Nestle the seared chicken back into the skillet and sprinkle with chopped bell peppers.
  6. Cover and simmer on low heat for about 20 minutes until everything is cooked through.
